The Tandoori is a barrel-shaped, open-topped, coal-fired oven with clay walls. This special clay feature of the Tandoori improves the taste and flavour of the cooking. Only natural ingredients, herbs and spices are used in cooking to enhance the flavour of the lamb. Tandoori cooking is in fact similar to Barbecue Cooking.
